Nancy's Recipe


Sour Cream Coffee Cake

Preheat oven to 350° Generously grease a tube pan or Bundt pan.

1 C softened margarine
2 eggs
1 tsp vanilla
1 C sugar
1 C sour cream
Mix together margarine, eggs, vanilla, sugar and sour cream.

2 C flour

1 tsp baking powder
½ tsp baking soda
Combine dry ingredients.

Combine wet and dry mixtures.


Prepare topping. Mix together:

¼ C sugar
2 tsp cinnamon    
 
Optional: Chopped nuts may be added after the first application of topping.
Pour half of the batter into greased pan, sprinkle half of the topping on top of batter.
Sprinkle nuts, if desired. Add the remaining batter and topping.
Coffee cake is done when a toothpick inserted in the middle comes out clean.
Check a large pan at 30 minutes, small pan at 23 minutes. Do not overbake.
Cool in the pan for 15-20 minutes.
